Ingredients:Breakfast Potatoes Recipe
- 2 cups coarsely chopped tiny new potatoes or round red potatoes
- ½ cup chopped onion
- ½ cup chopped green or red bell pepper
- 2 tablespoons olive oil
- ½ cup shredded cheddar cheese (optional)
- ½ teaspoons salt
- ½ teaspoon pepper
Directions:
1. In large non-stick skillet, heat olive oil on Medium (275°F).
2. Add potatoes, onions and peppers to pan and cook for 20-25 minutes, stirring occasionally.
3. Season with salt and pepper and sprinkle with cheese just before serving.
