Ingredients: How to make Pumpkin Soup
- 2 (15-ounce) cans pure pumpkin
- 4 cups water
- 1 cup half and half
- 1 garlic clove, pressed
- ¼ cup pure maple syrup
- 4 tablespoons unsalted butter, divided
- ½ teaspoon Chinese five-spice powder
- 6 button mushrooms
- Salt and pepper to taste
Directions:
1. Add pumpkin, water, half and half and garlic to large saucepan and bring to simmer on Medium-High (375°F), whisking often.
2. Whisk in syrup, 2 tablespoons butter and five spice powder.
3. Let soup simmer for 10 minutes, whisking often.
4. Season soup with salt and pepper to taste and set aside.
5. In medium skillet, melt remaining 2 tablespoons butter on Medium-High (375°F).
6. Add mushrooms and sauté for 10 minutes, until mushrooms are tender.
7. Serve soup in 6 bowls and divide mushrooms equally between bowls.
Tips:
For a thicker soup, add a mixture of 3 tablespoons cornstarch and ¼ cup water.
Soup can be made up to 1 day before serving. Simply chill the soup until cold, then cover. Bring to a simmer before serving.
