When you take advantage of the roasted peppers in the Nuwave and combine with the Precision induction cook top, dinner is ready in 20 minutes. Fresh, healthily and easy.
Serving size: 6 Servings
Ingredients: Roasted Red Pepper Sauce over Tortellini
- 2 9-ounce packages of cheese or meat tortellini
- 4 red peppers that have been roasted in the Nuwave or 2 jars of roasted red peppers.
- 1 cup of onion
- 4 cloves of garlic, minced
- 2 tablespoons butter
- 1 tablespoon fresh thyme or 1 teaspoon of dried
- 1 tablespoon fresh oregano or ½ teaspoon dried
- 2 teaspoons of sugar
Directions:
1. Cook tortellini according to package directions; drain. Return to saucepan.
2. Meanwhile, place roasted sweet peppers in a food processor bowl. Process until smooth. Set a side.
3. For sauce, in a medium saucepan cook onion and garlic in hot butter until tender. Add pureed pepper, thyme, oregano, and sugar. Cook and stir until heated through. Pour sauce over tortellini; toss and coat.
