Tip: I enhance the shrimp by poaching in beer, but the shrimp can be cooked in water and seasoning below. The trick to not having over-cooked shrimp is to cook fast and cool down fast. Always have and big bowl or your sink filled with cold water and ice to cool down shrimp.
